If you love seafood and love cajun this Cajun Seafood Gumbo recipe is for you!
1 cup flour
1 cup vegetable oil
Salt (to taste)
1 large onion (chopped fine)
1 green pepper (chopped fine)
2 cloves garlic (chopped fine)
3 lbs. uncooked seafood (Shrimp, Crab, Oysters)
ROUX: In a six quart pot, over low heat, mix oil and flour. Stir constantly until dark golden brown. Do not burn!
STOCK: Add to roux, onion, green pepper and garlic. Stir and simmer for 5 minutes. Now add 6 quarts of hot water, salt and cayenne pepper to taste. Simmer stock at least 1 hour.
SEAFOOD: 30 minutes before serving, add seafood.
