Grilled Shrimp Quesadillas

Give your family something different for dinner tonight. Try these Grilled Shrimp Quesadillas.

1 lb of shrimp, raw
1/4 c. lime juice
1/4 c. tequila (optional)
Taco seasoning 
Shredded Cheese, taco or nacho mix
Green onions, chopped
6-8 tortillas
Sour cream
Cooking spray

Peel and devein the shrimp, cut into smaller pieces. Marinate in lime juice 15-30 minnutes. You can also prepare the shrimp earlier in the day and let it marinate longer. Transfer the shrimp and lime juice to a saute pan coated with cooking spray. Add in tequila and cook over medium heat until the shrimp are done, 3-5 minutes. The alcohol will cook off, but you can leave it out if you choose. Remove cooked shrimp from pan, drain any excess liquid.

Spread some of the shrimp (1/6 - 1/8 of the mixture, depending on your preference) on half of a tortilla. Sprinkle generously with taco seasoning and add your toppings - cheese and green onions. Fold top half of tortilla over mixture and place on grill, grill on both sides. Since the shrimp has already been cooked, the quesadilla is done when the cheese is melted. Repeat with remaining tortillas.

You can add other ingredients as you choose, maybe tomatoes or avocado. Serve with sour cream and salsa.
