Shrimp Appetizer Wedges with Cream Cheese and Pineapple

For this Shrimp Appetizer Wedges recipe, this is one time I will tell you it is ok to buy pre-cooked shrimp. It will save you time. Please, though, feel free to buy raw shrimp and boil it yourself.

1/2 pound shrimp, cooked, peeled and deveined
6 ounces soft cream cheese
1/2 cup pecans, chopped
1/2 cup pineapple, crushed, drained
1/4 cup ripe olives, chopped
1 tablespoon lime juice
6 slices bread
6 slices wheat bread

Chop shrimp into small pieces. Combine all ingredients except bread; mix well.

Spread a little plain cream cheese onto bread and remove crust from all bread slices.

Spread equal amounts of shrimp mixture on 6 slices of white bread; cover with remaining slices of wheat bread and cut each sandwich into 4 pieces diagonally.

Makes 4 servings
