Shrimp Scampi and Pasta Recipe

This is a wonderfully delicious Shrimp Scampi and Pasta recipe! Of course, I love asparagus as much as I love shrimp so I really enjoy this recipe.

1 lb large raw shrimp frozen
6 oz whole wheat angel hair pasta
4 asparagus spears
1 1/2 cups chicken stock
2 cloves garlic
1 tbsp parsley
1/2 lemon
1 tsp salt
1 tsp pepper
1/2 tbsp olive oil

Sauté shrimp with one clove of garlic and olive oil in pan until shrimp is pink color. Transfer shrimp to bowl and set aside keeping juices from shrimp in the pan.

Cook pasta as directed in pot with boiling water. Drain pasta when done.

Sauté asparagus with other clove of garlic in another separate pan. Cook asparagus until it is slightly soft. Set aside to cool.

In the same pan in which you cooked the shrimp, add the chicken stock (or broth), the juice of the lemon half, parsley, salt and pepper. Bring to a light boil.

Turn off heat on stove after chicken broth has reached the light boil. Add pasta and shrimp. Slice each piece of asparagus into 3 equal pieces and add to pasta and shrimp.

Stir together until pasta has soaked up broth and serve. Add more lemon juice if desired.
