Grilled Scallop Shrimp Kabobs Recipe
Nutritious and delicious Grilled Scallop Shrimp Kabobs recipe. Serve your family these really great grilled shrimp kabobs tonight with a side of rice. They will love it! ¾ lb. large Sea Scallops 12 large Shrimp (in shells) 8 Cherry Tomatoes 8 medium Whole Mushrooms 1 medium Zucchini, cut into 1" slices ¼ cup each, Olive Oil 1 cup Lemon Juice 1 Tbsp. Fresh Thyme, chopped or 1 tsp. Dried Thyme ¼ tsp. Salt - or to taste ¼ tsp. Black pepper Mix olive oil, lemon juice, thyme, salt and pepper. Cut Scallops in half, if over 1" in diameter. Arrange Scallops, Shrimp and vegetables alternatively on 4 ten" skewers (if using wooden skewers, soak for ½ hour in cold water before using) brush with lemon-thyme mixture.
