Serve this recipe at your next holiday dinner and suprise your guests:

Easy Shrimp Artichoke Casserole

1/3 c. olive oil
1 lg. onion, chopped
1 pod garlic
1 bell pepper, chopped
1 1/2 lb. peeled raw shrimp
1 (15 oz.) can artichoke hearts, chopped, drained
2/3 c. cooked rice
1/2 lb. grated Jalapeno cheese
Bread crumbs
Salt and pepper

Saute onions, garlic and bell peppers in olive oil until tender. Add shrimp. Cover and simmer 10 to 15 minutes. Add artichoke hearts, rice and cheese. Mix well. Salt and pepper to taste. Pour mixture into 2-quart casserole dish. Add bread crumbs and dot with butter. Bake at 350 degrees for 30 to 35 minutes.
