Grilled Shrimp Sticks
Fire up the grill for these grilled shrimp sticks. Try them with a warm apricot dipping sauce.
1 lb uncooked peeled and deveined shrimp
¼ cup olive oil
2 garlic cloves, finely chopped
½ cup breadcrumbs (seasoned is best)
½ lemon
salt & pepper to taste
Rinse shrimp and pat dry. Combine garlic and olive oil. Place shrimp in a bowl and add the garlic and olive oil mixture. Add the breadcrumbs and toss to evenly coat the shrimp.
Thread the shrimp onto skewers. Grill over medium heat for approx. 2 minutes per side, or until they are opaque in the center and crumb coating starts to brown.
When they are done, serve on a platter. Squeeze lemon juice over shrimp and salt & pepper to taste.
Note: If using wooden skewers, soak them in water while preparing the shrimp. It prevents them from burning.
Quick and Easy Apricot Dipping Sauce
Heat up 1/2 cup apricot preserves in a saucepan using low-medium heat until warm. Serve with Shrimp.
