Shrimp Omelette - Easy Shrimp Recipe for Breakfast or Anytime!

5 eggs
2 tablespoons milk
salt to taste
pepper to taste
1/2 pound raw shrimp, peeled & deveined
1 - 2 leeks, sliced
1 garlic clove, minced
1/2 cup grape tomatoes, halved
2 tablespoons butter
1/4 cup white cheddar cheese - shredded
In small mixing bowl, whip eggs with milk, salt and pepper; set aside.
In a skillet over medium heat, sauté the shrimp, leek, garlic and tomatoes in butter for 3-5 minutes, until shrimp are pink.
Pour in eggs. Let egg cook for several minutes, swirling pan to get any "wet" egg to the edges of the pan, flip over and sprinkle with cheese. Let cook another 2 mintues or until desired doneness, fold in half and place on plate. Enjoy! (You can also add egg and cheese together and scrammble. Continue scrammbling until firm.)
