Coconut Fried Shrimp Recipe

Can’t decide what’s for dinner tonight? Try this easy to make Coconut Fried Shrimp and Honey Mustard Sauce Recipe.

1 lb. medium Shrimp – thawed, peeled and deveined
1 quart vegetable oil
1 -12 oz. bottle plain seltzer water
1 cup all-purpose flour plus
2 Tbsp. all-purpose flour
1 - 3- 1/2 oz. can shredded coconut

Honey Mustard Sauce Recipe

1/3 cup sour cream
1/3 cup Dijon style mustard
1/3 cup honey
3/4 teaspoon ground red cayenne pepper (optional)

Stir together all ingredients until well blended. Chill until ready to serve.

Instructions:
Heat oil in deep 2 quart saucepan over medium high heat to 350° F.

Pour seltzer in to medium size bowl. Using a wire whisk, beat in 1 cup flour, approx. 1/4 cup at a time. Spread the other 2 tablespoons flour in shallow dish. Spread coconut in second dish.

Make sure shrimp are patted dry. Place approx. 4 shrimp at a time in the plain flour and dust each shrimp with flour. Next dip them in the batter to coat them with batter, and then roll in coconut. Continue until all shrimp are dusted with flour, coated in batter and covered with coconut.

Fry in hot oil 1 1/2 to 2 minutes until golden brown. Fit only enough in pan to not crowd. Cook in batches if needed, 4 to 6 at a time. Drain on paper towels. Serve with honey mustard sauce.
