Shrimp Omelette - Easy Shrimp Recipe for Breakfast or Anytime!

5 eggs 2 tablespoons milk 1/2 pound raw shrimp, peeled & deveined 1 - 2 leeks, sliced
1 garlic clove, minced
1/2 cup grape tomatoes, halved
2 tablespoons butter
1/4 cup white cheddar cheese - shredded
1/4 cup sliced mushrooms (optional)
salt to taste
pepper to taste
In small mixing bowl, whip eggs with milk, salt and pepper; set aside.
In a skillet over medium heat, sauté the shrimp, leek, garlic and tomatoes in butter for 3-5 minutes, until shrimp are pink.
Pour in eggs. Let egg cook for several minutes, swirling pan to get any "wet" egg to the edges of the pan, flip over and sprinkle with cheese. Let cook another 2 mintues or until desired doneness, fold in half and place on plate. Enjoy! (You can also add egg and cheese together and scrammble. Continue scrammbling until firm.)

1 recipe Basic Roll Dough
1/4 c. butter, melted
1/2 c. sugar, divided
2 tbsp. orange rind, grated
1/4 c. butter
1/4 c. sour cream
1 tbsp. orange juice
Roll dough into a 14 x 9 inch rectangle on a lightly floured surface. Combine softened butter, 2 tablespoons sugar, and orange rind; spread over dough, leaving a 1/2 inch margin. Roll up jelly-roll fashion, starting at long side. Pinch long edge (do not seal ends). Cut roll in 1 1/2 inch slices. Place slices, cut side down, 1/2 inch apart in greased 9 inch square pan. Cover and let rise about 40 minutes until doubled in bulk. Bake at 400 degrees for 20 to 25 minutes until browned. Remove rolls from pan while hot. Combine remaining sugar, butter, sour cream, and juice in saucepan. Cook over medium heat; stir constantly until thoroughly heated. (Do not boil.) Pour over warm rolls. Yields: 3/4 dozen.
